I am a strong believer in setting healthy intentions for myself and my family. Whether it’s a quick breakfast on the way to school or a sit-down meal as a family, our goal is to get good-for-you foods into every meal and get the kids involved. All while keeping things manageable and, of course, fun for everyone. This month is National Nutrition Month and I am excited to be partnering with Aramark to share more on my favorite health hacks for keeping your family’s eating habits on track.
I cook a lot at home but being a busy working mom, it can be hard to juggle a crazy schedule and also find time to cook healthy meals. Put a healthy spin on your family’s favorites. Take traditional tater tots and give them a nutritious spin by using zucchini instead of potatoes.
My boys love to wring out the zucchini when we make zucchini tots! If your kids are older, they can help grate the zucchini or mix all the ingredients together. Let’s have some fun in the kitchen!

Incorporate fruits and veggies even when you are on the go. Smoothies as delicious as they are, are also a convenient way to get in a ton of fruits and veggies into your daily routine. We switch up what we put in our smoothies but a nutrient rich start to the day is always a must for us. Our go to is my Protein Packed Coco-Mango Shake.

Swap in veggies into your family favorite meals. Zucchini noodles, riced veggies and shredded vegetables are a great way to add in nutrients with little effort. You can swap them in entirely or do a partial swap by incorporating a 50/50 ratio.
*Asian Stir-Fry: Swap in cauliflower rice or make your stir fry with a 50/50 split of brown rice and cauliflower rice.
*Pasta Night: 50/50 split of whole wheat spaghetti and zucchini noodles.
*Add shredded zucchini and carrots to meatballs, burgers, pancakes, bread... really anything at all!
Over the past week on CORA-ntine Cuisine, I got to reunite with several friends that Nicole and I have made over the years. Our incredible guests included Maria Shriver, Sheila E, Debi Mazar, Chef Gabriele Corcos, Chef Karen Akunowicz and the Shirley Temple King! Many of the guests spoke of the importance of taking care of your health and eating foods that boost your immune system.
