Cat Cora’s Avocado Toast with an Over-Easy Egg

Cat Cora’s Avocado Toast with an Over-Easy Egg

INGREDIENTS

1 avocado

4 slices whole wheat bread

¼ cup cherry tomatoes, halved

Salt and pepper to taste

 

INSTRUCTIONS

Heat a small pan over medium heat with a ½ tablespoon of extra-virgin olive oil. Crack in one egg and let it cook for 2-3 minutes until the edges are crispy and slightly brown and the white is mostly set. With a spatula or using the pan, flip the egg over and allow it to cook for another minute. Remove from pan and repeat with the other eggs.

Slice the avocado in half and remove the pit. Scoop out the flesh with a spoon and mash in a small bowl, season with salt and pepper to taste.

Toast the bread slices, and then smear with avocado. Top each with an egg and cherry tomatoes.
