Cat Cora’s Baked Mediterranean Shrimp with Tomato and Feta

Cat Cora’s Baked Mediterranean Shrimp with Tomato and Feta

Serves 4-6

 

INGREDIENTS

1 medium onion, small diced 

3 cloves garlic, minced 

2 tablespoon olive oil

1 jar tomato sauce (or can of crushed tomato)

1 tablespoon fresh chopped oregano

1 pound large raw shrimp, peeled, deveined (thawed if frozen)

Salt to taste 

Pepper to taste 

1 Lemon, halved 

1 tablespoon ripped fresh parsley

 

INSTRUCTIONS

Preheat oven to 400 degrees.

In a large sauté pan heat the olive oil medium-high heat. Add the onion and cook until soft, 2-3 minutes. Add the garlic and cook another 1 minute. Add the tomatoes and oregano and bring to a simmer. Reduce the heat and let the sauce simmer for 10 minutes.

Remove the sauce from the heat, and stir in the parsley, shrimp, salt and pepper. Sprinkle the crumbled feta cheese. Place in the oven and bake until the shrimp are cooked through, about 8-10 minutes. Garnish with fresh parsley and a squeeze of lemon juice. Serve immediately with rice or orzo and side salad.
