INGREDIENTS
For Dough
3 1/2 to 4 cups all-purpose, plus more for rolling
1 envelope instant dry yeast
2 teaspoons kosher salt
1 1/2 cups warm water,
2 tablespoons olive oil, plus 2 teaspoons
For Pizza
1 ball pizza dough
1/3 cup pizza sauce or marinara
4 ounces (1 cup) shredded mozzarella cheese
1 tablespoon fresh Basil or Oregano-optional
Flour if needed
INSTRUCTIONS
Preheat oven 500 degrees if you have a pizza Stone otherwise 375 degrees.
Combine the flour, yeast and kosher salt in the bowl of a stand mixer and combine. While the mixer is running, add the water and 2 tablespoons of the oil and beat until the dough forms into a ball. If the dough is sticky, add additional flour, a little at a time, until the dough comes together and mixed well. Scrape the dough onto a lightly floured surface and gently knead into a smooth round of dough.

Form a pizza round.
Spread the pizza sauce over the dough using the back of a spoon to create a thin layer. Add the pieces of fresh mozzarella cheese evenly across the dough, then top with the shredded mozzarella cheese. If you choose to use fresh herbs, sprinkle evenly with basil or oregano
Use the pizza peel to carefully transfer the pizza onto the preheated pizza stone. Or bake on a baking sheet without a stone. Bake the pizza until the cheese and crust are nicely browned, about 5 to 7 minutes in the oven (or 1 minute in a pizza oven). Slice into pieces and serve immediately.
