Serves 4
INGREDIENTS
2 tablespoons olive oil
1 lb. ground beef
1 yellow onion diced
2 cloves garlic, minced
1 small can tomato sauce
1 teaspoon cumin
1 teaspoon garlic powder
Salt and pepper to taste
4 blue corn taco shells
4 oz Mexican cheese blend
½ head iceberg lettuce, shredded
1 avocado, sliced
½ cup sour cream
½ pint cherry tomatoes, halved
Salsa, for serving
INSTRUCTIONS
In a large saucepan heat olive oil over medium-high heat. Once hot add ground beef and cook until browned, about 5 minutes.
Add onions and garlic and continue to cook until onions are translucent 5 minutes more. Add tomato sauce and spices and cook for 5 minutes longer.
Season with salt and pepper to taste.
Remove from heat and spoon into taco shells. Top each taco with cheese, lettuce, avocado, sour cream and cherry tomatoes. Serve with salsa or hot sauce if you like.
