Cat Cora’s Crisp Buttered Fingerling Potatoes (Inspired By Jacques Pepin)

Cat Cora’s Crisp Buttered Fingerling Potatoes (Inspired By Jacques Pepin)

Serves 4-6

INGREDIENTS

1 pounds small fingerling potatoes

1 tablespoon olive oil

Salt to taste

Pepper to taste

1 tablespoon butter

2 teaspoons chopped fresh parsley or chives

 

INSTRUCTIONS

Preheat oven to 400 degrees.

Toss potatoes, salt, and black pepper together in a bowl. Drizzle with olive oil and toss again until evenly combined.

Heat a large sauté pan over medium-high heat. Add butter and melt. Add potatoes and cook until evenly coated with butter, about 2 minutes. Move pan to the preheated oven.

Roast in the preheated oven for 15 to 20 minutes or until soft, tossing potatoes halfway through. Remove from oven and top with parsley or chives.
