Cat Cora’s Iced Caramel Apple Cider Margaritas

Cat Cora’s Iced Caramel Apple Cider Margaritas

My signature Caramel Apple Cider Margarita is a cold fall drink that will warm you up! The cinnamon sugar and apple cider flavors will make you feel like you are having Thanksgiving dinner with your family. I also love making this as a mocktail for my sons, just omit the tequila. Living next to so many great farmer’s markets, I love to shop for fresh seasonal produce and find ways bring their flavors to life in my holiday meals that are new and exciting. This one is a fun twist on having traditional apple cider.

INGREDIENTS

Rim:

Equal parts cinnamon and sugar

Cocktail:

3 oz tequila (omit for mocktail)

2 oz lemon juice

3 oz apple cider

3 oz ginger beer

Garnish:

Apple slice dipped in caramel

INSTRUCTIONS

In a shallow dish or small plate, mix together cinnamon and sugar.

Rub an apple wedge around the rims of 2 glasses and turn upside-down onto dish with sugar to coat the rims. Fill glasses with ice.

Add tequila, lemon juice and cider to a shaker with ice. Shake vigorously, then strain into ice-filled glasses. Top drinks with ginger beer. Garnish with Carmel dipped apple slices.

Chocolate Budino
Chocolate Budino

Budino in Italian means pudding but this is more like a molten cake, moist and almost gooey in the middle when served warm from the oven. I like to serve the budino with a scoop of homemade Banana Chocolate-Chunk Ice Cream (in my cookbook, Cooking From the Hip), but it's also great with creme anglaise and fresh raspberries or strawberries.
