1 pound leftover cooked chicken and beef (any protein will do or veggie only)
2 tablespoons olive oil
2 cups fresh or frozen mushrooms
2 cups frozen carrots
2 cups frozen vegetable medley
1 teaspoon fresh grated ginger
2 tablespoons of chives or scallions
1 tablespoon of Braggs aminos or soy sauce
Salt to taste
Pepper to taste
Heat a large sauté pan on high heat, add olive oil and mushrooms. Sauté until goldenbrown or about 2-3 minutes.
Add frozen vegetables and chicken and beef. Cook for 3-4minutes.
Add ginger, chives and Braggs aminos.
Season with salt and pepper. Mix welland serve over rice.
