Makes one loaf
INGREDIENTS
2 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
3/4 teaspoon salt
3 overripe bananas, smashed well
6 tablespoons butter, melted
2/3 cup sugar
2 eggs
1/2 cup non-fat Greek yogurt
2 teaspoons vanilla extract
1/3 cup Nutella
INSTRUCTIONS
Preheat the oven to 350ºF. Grease a 9x5 loaf pan.
In a large bowl, combine the flour, baking powder, baking soda, and salt. Add in the smashed bananas, melted butter and sugar, stirring to combine. Mix in the eggs, greek yogurt, and vanilla. Set aside. Pour half of the batter into the prepared loaf pan. Spoon in half of Nutella over batter, gently swirling the batter with tip of a knife to form ribbons of Nutella. Pour the second half of the batter on top and repeat with remaining Nutella. Bake for approximately 50 minutes, or until a toothpick or skewer inserted in the center comes out clean.
Remember to check on your bread while it’s baking. If you notice the top is browning too fast... cover it with foil for the duration and/or lower the oven temp by 25 degrees.
Allow to cool for 10 minutes or eat warm out of the oven.
