1 quarter of a large watermelon (seedless if possible) peeled and cut in large chunks, about 4 cups of fruit
1 bottle of chilled Prosecco or champagne
4-6 fresh mint leaves to garnish
4-6 lime wedges to garnish
In a blender, blend watermelon chunks until smooth. Strain the watermelon mix into a pourable container. Chill the watermelon mix in the refrigerator until ready to prepare the drinks. Pour the watermelon juice into champagne flutes, about half full. Add the Prosecco or other sparkling wine, pouring it gently to avoid bubbling over. Stir gently and garnish with a fresh sprig of mint and lime wedge. Serve cold.
