Cat Cora’s Zombie Mama

INGREDIENTS

1/4 oz grenadine 
1/4 oz Falnerum
1/2 oz cinnamon simple syrup
2 oz pineapple juice
1.5 oz blue curacao

Foam:1 can Coconut milk 
Blue food coloring 

Cotton Candy:
1/4 cup granulated  sugar 
1 tablespoon orange extract 
1 Kumquat 
Dry ice

PREPARATION

Using a layering tool or the back of a spoon add the grenadine, falnerum, simple syrup.

Next add the pineapple juice, white rum and curacao. Add 1 cup of coconut cream & blue food color to a mixing cup and blend with and immersion blender. Add to and isi whipper and charge with 2 cream chargers.

Dispense the cream on the top of the drink. Mix the sugar, orange extract and blue food color with a small whisk.

Pre heat a cotton candy maker add 1 tablespoon of the flavored sugar. Cut a slit into the kumquat and pop in a piece of dry ice. Add to a wooden skewer and spin until you have a large cotton candy poof.

Top the drink with  the the cotton candy and torch to caramelize the sugar, then dip into the drink to activate the dry ice and chill the drink.

Budino in Italian means pudding but this is more like a molten cake, moist and almost gooey in the middle when served warm from the oven.
