Cat Cora's Easy Egg Sandwich

Cat Cora's Easy Egg Sandwich

Serves 1

INGREDIENTS

2 eggs, beaten

2 slices of bread

Salt to taste 

Pepper to taste

1/2 avocado, sliced 

1 cherry tomato 

1 tablespoon olive oil 

 

INSTRUCTIONS

Heat the olive oil in a medium non-stick sauté pan over medium heat, pour the eggs in like you would for an omelet. Add the two slices of bread to the uncooked eggs. Cook until the eggs have set on one side and flip over to cook the other sides of the bread. Season with salt and pepper. Then fold the excess egg around the edges in and fold one piece of bread onto the other to form into a sandwich. Place the sliced avocado on top of sandwich with a cherry tomato and toothpick through it.
