Cat Cora's Flank Steak with Fresh Vegetable Salsa

Cat Cora's Flank Steak with Fresh Vegetable Salsa

The Pioneer Woman Dog Treats are a collection of treats made with high-quality ingredients and inspired by Ree’s homestyle recipes. Lala just loves her Beef & Veggies Recipe Jerky Sticks and I love that they're made with simple, natural ingredients; so much that I wanted to make a dish so that my whole family could enjoy the same recipe together. Check out my Flank Steak with Fresh Vegetable Salsa!

INGREDIENTS

1 (2 to 3-pound) flank steak

2 cups mixed chopped seasonal fresh vegetables, such as squash, broccoli, cauliflower, zucchini, peas, tomato, and carrots

1/4 cup white wine vinegar

1/2 cup olive oil

2 limes, juiced

1 tablespoon chopped fresh cilantro leaves

1 tablespoon chili powder (optional)

1 teaspoon salt

1/2 teaspoon black pepper

INSTRUCTIONS

Preheat a large nonstick saute pan, or preheat a grill or grill pan. Sear the flank steak on both sides for 3 to 4 minutes on each side or until medium-rare. Remove steak from heat and let rest for 10 minutes.

Meanwhile, combine vegetables, vinegar, olive oil, lime juice, cilantro, salt, and pepper in a large bowl and mix well.

Cut steak against the grain into slices. Serve the steak and vegetable salsa with tortillas.

Chocolate Budino

Budino in Italian means pudding but this is more like a molten cake, moist and almost gooey in the middle when served warm from the oven. I like to serve the budino with a scoop of homemade Banana Chocolate-Chunk Ice Cream (in my cookbook, Cooking From the Hip), but it's also great with creme anglaise and fresh raspberries or strawberries.
