Cat Cora's Watermelon Jello

Cat Cora's Watermelon Jello

INGREDIENTS

1 small watermelon

1-2 packets red-colored Jello mix

2 tablespoons sugar optional

1.5 cups boiling water

INSTRUCTIONS

Scoop out the inside of a small watermelon (save the top) and blend until liquified.

(Add some water if you need to help it break down) Take boiling water off the burner. Add the sugar and jello mix to the boiling water and mix. Then add the watermelon juice to the mixture and stir it together.

Pour everything into the watermelon, cover it with the top of the watermelon and put into the refrigerator for 4 hours or until firm.

(You can add an extra packet of jello mix to the boiling water if you have a larger watermelon).

Chocolate Budino
Chocolate Budino

Budino in Italian means pudding but this is more like a molten cake, moist and almost gooey in the middle when served warm from the oven. I like to serve the budino with a scoop of homemade Banana Chocolate-Chunk Ice Cream (in my cookbook, Cooking From the Hip), but it's also great with creme anglaise and fresh raspberries or strawberries.
