Unlike the saccharine Grasshoppers of the 1960's, my version of this cocktail is lighter and more complex, thanks to the white chocolate liqueur and vanilla-infused vodka. And because I like a taste of sweet at the end of a meal, sometimes this minty drink is the only dessert I serve. Use clear creme de menthe, which looks better in the glass than the garish green brands. I like martini glasses but this cocktail gives you license to be creative and use any glassware you like.

Ingredients

½ Ounce Dark Chocolate (60% cacao or higher)
2 Teaspoons Light Corn Syrup
6 Ounces Clear Creme de Menthe
6 Ounces White Chocolate Liqueur
6 Ounces Vanilla Infused Vodka
4 Small Fresh Mint Sprigs

Instructions

1. Using a microplane or other superfine rasp grater grate the chocolate onto a saucer. With your finger, run corn syrup around the rim of each glass. Roll each rim in the grated chocolate and set the glasses aside. Repeat with the remaining glasses. 

2. Pour the crème de menthe, white chocolate liqueur, and vanilla vodka into a shaker filled with ice, shake until well blended and then strain into the glasses, being careful not to splash off the chocolate rims. 

3. Garnish each cocktail with a sprig of mint.
