Luscious color and flavor make this one of my favorite faux margaritas
1½ Cup Mango (Cubed) ¾ Cup Tequila ½ Cup Triple Sec ½ Cup Fresh Lime Juice (Reserve Slices for Garnish) 4 Cup Crushed Ice 2 Tablespoon Superfine Sugar 4 Mango Chunks (For Garnish) 4 Grapes (For Garnish) 2 Wooden Skewers, snapped in half (For Garnish)
1.Puree the mango in a blender. Add the lime juice and crushed ice. Blend until smooth.
2.Pour the sugar into a saucer. Run a small wedge of lime around the rim of each glass and dip the rim into the sugar. Carefully divide the margarita mixture among four glasses and serve.
3.To Make Skewers for Garnish: Thread each half-skewer with 1 mango chunk, 1 thin slice lime and 1 grape.
4.Option Watermelon Margarita: Use 3 cups cubed watermelon in place of the mango.
Budino in Italian means pudding but this is more like a molten cake, moist and almost gooey in the middle when served warm from the oven. I like to serve the budino with a scoop of homemade Banana Chocolate-Chunk Ice Cream (in my cookbook, Cooking From the Hip), but it's also great with creme anglaise and fresh raspberries or strawberries.
