Roasted Pumpkin Seeds

Whether you're baking a pie or carving out a spooky face in your pumpkin, then first going to have to scoop all the seeds out of that pumpkin. Don't toss the seeds,  with a few mins of prep, you can turn these seeds into the perfect snack!

INGREDIENTS

Pumpkin Seeds from 1 Pumpkin

1 tsp Salt

2 tsp Olive Oil

*Feel free to add a tsp of rosemary, chili powder or your favorite seasoning as well!

INSTRUCTIONS

1. Preheat oven to 350 F. Clean all of the pumpkin chunks and strings off of the seeds. Rinse them off and pat them dry. You don't want to put wet seeds into the oven.

2. Season your pumpkin seeds with olive oil and salt. Lay them on a baking sheet and bake in the oven for 45 minutes.

Chocolate Budino

Budino in Italian means pudding but this is more like a molten cake, moist and almost gooey in the middle when served warm from the oven. I like to serve the budino with a scoop of homemade Banana Chocolate-Chunk Ice Cream (in my cookbook, Cooking From the Hip), but it's also great with creme anglaise and fresh raspberries or strawberries.
