WW Cat Cora's Chopped Vegetable Salad

Serves 6-8 People

Ingredients

Red Wine Vinaigrette

3 Tbsp Red Wine Vinegar

1 Tbsp Dijon Mustard

1 Garlic Clove, minced

1/4 Cup Extra Virgin Olive Oil

1/2 tsp Kosher Salt

1/4 tsp Black Pepper, freshly ground

 

Chopped Salad

1 Head of Romaine Lettuce or 2 Heads of Baby Gem Lettuce, chopped

1/2 English Cucumber, diced

1 15-oz Can Garbanzo Beans, rinse well

1/2 Cup Red Onion, diced small

1/2 Cup Celery, chopped

1/2 Cup Jarred Artichoke Hearts, chopped

1/2 Cup Cherry Tomatoes, halved

4 Pepperoncini, thinly sliced

4 oz Provolone, small diced

1 tsp Kosher Salt

5-6 grinds Black Pepper

 

 

Instructions

  1. Whisk together the vinegar, mustard, and garlic in a small bowl. Slowly drizzle in the oil, whisking constantly, until vinaigrette is thick and creamy.  Add the salt and pepper and whisk once more (The vinaigrette can be made 1 to 2 days ahead and kept, covered, at room temperature.)
  2. Put all of the salad ingredients into a large salad bowl. When ready to serve, pour the vinaigrette over the salad, and toss well to combine.
