Cat Cora’s Frito Pie

Cat Cora’s Frito Pie

Serves 4-6

INGREDIENTS

1 lb ground beef

2 tablespoons chili powder

1/2 white onion, small diced

2 cloves garlic, minced

2 teaspoons cumin

1 tablespoon fresh chopped oregano or dried

Salt to taste

Pepper to taste

1 (15 ounce) can tomato sauce

1 cup chicken stock, beef stock or water

2 cups Fritos

1 cup shredded cheese

Diced onion for garnish

1/2 Jalapeños, sliced small in thin round slices

Sour cream for garnish

Salsa for garnish

 

INSTRUCTIONS

Cook the ground beef in large pot over medium-high heat, until cooked, for about 6-8 minutes. Add in the onion and garlic and cook with beef until translucent, about 2-3 minutes.

Add in oregano, salt, pepper, tomato sauce and stock. Stir to combine. Cover and simmer over medium heat, about 10-15 minutes. In bowl, in the frito bag or plates layer the Frito chips, top with some chili, cheese, onion, jalapeño and additional toppings, serve hot.

Chocolate Budino

Budino in Italian means pudding but this is more like a molten cake, moist and almost gooey in the middle when served warm from the oven.
