Cat Cora's Chicken Taco Jar

Cat Cora's Chicken Taco Jar

Serves 4

INGREDIENTS

For The Taco Seasoning:

1 Tbsp Ancho Chili Powder

½ Tbsp Cumin

1 tsp Smoked Paprika

1 tsp Salt

¼ tsp Garlic Powder

¼ tsp Onion Powder

 

For The Jar:

4 cups Cooked Chicken, chopped

2 cups Mild Salsa, divided

2 cups Black Olives

2 cups Chopped Tomatoes

2 cups Black Beans

2 cups Corn Kernels

2 cups shredded Mexican Cheese Blend

1 cup fat free Greek Yogurt

1 Lime, juiced

2 heads of Romaine Lettuce, chopped

 

INSTRUCTIONS

Mix the chicken and seasoning blend together in a small bowl and set aside.

Fill each jar with 2 Tbsp salsa, 1 cup chicken, ½ cup of cheese, ½ cup olives, ½ cup of tomatoes, ½ cup black beans, ½ cup corn kernels and top with ½ head of romaine lettuce.

In a separate bowl stir together the remaining salsa with the Greek yogurt and lime juice and divide among separate containers for extra dressing.
